How to start a meat locker in mn?

within the next year or so i would like to open a meat locker/ butcher shop in the state of minnesota. i know how to process about every animal out there but what i am wondering is how do i go about starting one, are there any special certifications i will need? i plan on selling meat as well as processing livestock for people. thanks in advance for the help.
